Simple Garlic Herb Roast

Ingredients

  • 1 3-7lb roast

  • 1tbs coarse salt

  • 2tsp black pepper

  • Fresh thyme, rosemary, and oregano

  • 5 cloves garlic, chopped

  • 1 shallot, sliced

  • 2-4 cups water

1. Thaw roast

2. Preheat oven to 400 degrees F

3. Quickly rinse and pat dry roast

4. Place roast in a pan, sprinkle with salt and pepper over entire roast

5. Add herbs, garlic, shallot and 1 cup water to the pan around the roast (do not put on the roast, as these ingredients will only burn)

6. The amount of water depends on how big your pan is. the general rule is to have about 3/4” of water in the bottom of the pan.

7. Place in oven and cook uncovered for 1 hour, you may need to add more water throughout this time

8. After an hour, turn temperature down to 225 degrees F , add more water, and cover roast

9. Cook low and slow for 6-8 hours, checking water occasionally and adding more if needed. A larger roast needs more time.
